Food has always been a passion of mine and it's been a long time dream to study at Ballymaloe.The closest I ever got to the house was sitting outside as a child, eating homemade cheese sandwiches with a packet of tayto, jealous of all the happy diners on their way to lunch.Ever since then I've wanted to be a part of the Ballymaloe experience.My love of food increases every day and I dream of a career in the food industry.This is the perfect chance to learn the craft of cooking from the best.

My dish is a Tuscan bean soup with sourdough bread.Cannelini beans in a carrot,onion+celery soup,w thyme and rosemary.I love the simplicity of Italian food.When you have good ingredients there is so little needed to bring them to life.This is a simple,hearty,economical dish based on traditional Italian cooking.The bread is made from spelt flour using my own sourdough starter.My cooking is very much home cooking and I would love the opportunity to hone it into something more skillful and refined
