My earliest memories are of stirring Christmas pudding. Since then my passion for food & love for cake-making has grown daily. Family & friends still test my experiments with new dishes… mostly successful:)I value food & the effort it takes it to get it to our plates. I learn best hands-on & have been pondering the Ballymaloe course since I left school…some time ago. This is a life-changing opportunity to fulfil my dream of living & working with food. My contract ends in Dec...perfect timing.

Inspired by tasty homegrown ingredients, travels & rainbows Mairéad’s Rainbow Bento is a colourful dish ideal for a busy day at Cully & Sully HQ - either for sharing or for one hungry person! I believe in local ingredients, variety & growing your own wherever possible. The dish is balanced around lunch with small portions of soup or salad, tortilla or pasta & something nice (biscuity/cakey) for a cuppa. Its changeable like the Irish weather, can be scaled up easily for a crowd & is very tasty.
