I really enjoy cooking for friends and family though I would love to be much better. I get a great kick out of cooking ,and seeing people enjoy it and feeling satisfied afterwards. I have wanted to improve my skills for sometime and looked into doing a course in ballymalloe,but it just wasnt affordable. I would love to get a chance to take this course and make a career out of something I love doing. I enjoy good food and dont mind spending the little time it takes to make something home-cooked.

I got this receipe from my sister in law afew years ago, who in turn got it from a lady named Kathleen, hence the title. I make this tart maybe once or twice a month and it gets lots of compliments. Appletart is an old favourite, but this pastry is just so light...it almost melts in your mouth! Although greatful for the compliments,I dont take credit for the tart it is so easy to make, my dad has even made it! My thanks to Kathleen.
