Having spent the past 10 years as a Stay-at-home-Father to our 3 children, I have been lucky to have had the opportunity to indulge my passion for food - with a willing audience. Now the time has come when I need to refocus on my career, and my plan is to open a Delicatessen. Winning the prize of the Ballymaloe course and two week ‘internship’ with Cully & Sully would provide me with a strong technical foundation to succeed.
You have 500 characters to tell us about your dish:
This is an informal dish that doesn’t take itself too seriously, and is best eaten with fingers. What emerges from the oven is a whole chicken, glistening crimson red and wafting rich aromas of tandoori spices. For a fun family supper, place the chicken on a platter garnished with pilau rice and limes, and serve with warm naan breads and a tomato, onion and coriander relish. I like to eat this dish with Ella & Georgia, my two daughters, while watching a movie – it makes them smile, and me too!
