Everything on the plate is homemade. The salted caramel is salted w/ Smoked Maldon Salt giving it a smoky hint & is also inside the delice, taking advantage of the way that caramel, salt & chocolate complement each other. The wafer is comprised of caramel, sesame seeds & almond & tastes much like a dime bar. The ice cream is flavoured w/ pearl barley & malt extract. When I serve this dish I tell people that it's sea salt flakes on top. It's actually popping candy (this never gets old).
