Ballymaloe is to me what the chocolate factory was to Charlie. I've visited the cookery school & I'm a huge fan of & a believer in the ethos of locally sourced and/or home grown organic ingredients which are cooked to a standard befitting their quality
I believe I have the passion, work ethic and sheer will to make the most of this opportunity and I think that a qualification from the school would be the perfect platform to launch a career in either the kitchen or the farmers' market.
You have 500 characters to tell us about your dish:
Everything on the plate is homemade. The salted caramel is salted w/ Smoked Maldon Salt giving it a smoky hint & is also inside the delice, taking advantage of the way that caramel, salt & chocolate complement each other.
The wafer is comprised of caramel, sesame seeds & almond & tastes much like a dime bar.
The ice cream is flavoured w/ pearl barley & malt extract.
When I serve this dish I tell people that it's sea salt flakes on top. It's actually popping candy (this never gets old).
