For as long as I can remember I have loved cooking and baking for family and friends.My Dad is a baker and two of my uncles are involved in the food business so it has always been a huge part of my life. My ambition has always been to open my own cafe/bakery/deli where I can produce the foods and desserts I love using great local produce!The cookery school at Ballymaloe would be the perfect place for me to learn techniques and the best way to use ingredients, & help me achieve a lifelong dream!
You have 500 characters to tell us about your dish: 
I love slow cooked meat dishes in the winter, and this one is great as beef cheeks are so inexpensive - four cheeks are about €6 and will feed four people!I halve the cheeks and brown them in olive oil, then cook them with onions, carrots, celery, leeks, a bottle of red wine, a splash of port and some fresh herbs and let them simmer away for up to 2 hours until you can cut the meat with a spoon!On the side is garlic and rosemary polenta cake and sauteed rainbow chard.Great for a Wintry Sunday!

Lol I know it was devoured! Wasn't sure if I should mention it in the entry in case it was a bit cheeky putting in a second thing!It's chocolate cake with peanut butter buttercream frosting, a chocolate ganache glaze and white chocolate writing. Only for special occasions though, the frosting takes a lot of patience to work with it tends to want to stick to itself more than it wants to stick to the cake! Wink

Yup I did indeed, l picked

Yup I did indeed, l picked up a few tips from my Dad over the years - apparently when I was little I used to sit on the turntable you use for icing cakes and twirl myself around to amuse myself while he was working =D
