I took volunatry redundancy in 2002 and booked onto the 12 week Ballymaloe course in September 2003 (it was booked out til then) but had to withdraw as my wife was pregnant with twin boys. I then became a stay at home dad and the Boys are now nearly 8 years old. After all these years I would still dearly love to do the course and I think this competition is a great opportunity to pursue a change and idea that started for me in early 2002.
You have 500 characters to tell us about your dish:
The dish is a fillet of cod, topped with homemade pesto and breadcrumbs. Accompanied with creamed potatoes with a hint of garlic, roasted vine tomatoes and sautéd leaks. Simple, straight forward and all done in about 45 minutes.

Sounds like a very tasty fish recipe indeed. Cod and pesto make an interesting fusion. Am curious about this one.
It's delicious. The fish is light and delicate and the pesto adds a lovely flavour with the breadcrumbs bring a crunchy topping. You will love it.
